Litopenaeus vannamei

The Pacific white leg shrimp (Litopenaeus vannamei) is the world’s most common farm-raised shrimp species and is well suited for extensive to intensive production. Vannamei shrimp is originally from the Central and South American regions. In previous years, it largely replaced native black tiger shrimp (Penaeus monodon) in Asian countries as the most farmed shrimp. This species is more resistant to diseases and grows faster than other farmed species. Therefore, the main part of the shrimp in the seafood markets is a product of aquaculture activities and the majority of farmed shrimp are grown in Asia.

What is the most common form of export shrimp?

The main form of shrimp presentation in international seafood markets is head-on shell-on (HOSO). HOSO shrimp describes as HO stands for “Head On” and SO stands for “Shell On”.  Therefore, this word means Head On Shell On shrimp. This is the simplest type of shrimp processing without any additional procedure. According to global seafood preference, European and Asian markets select the raw shrimp or HOSO product, while the American markets select other processing products.

How is HOSO shrimp processed?

Farmed shrimp harvesting

After estimating the number of shrimp and calculating the average weight of live biomass, it is possible to start the harvesting operation from the shrimp pond. Therefore, after checking the shrimp molting status, the harvesting operation can be done manually or mechanically. The quality of shrimp depends to a great extent on the handling techniques and processing operations after harvesting. Harvested shrimp are stored in tanks containing powdered ice and quickly transported to the processing plant by refrigerated trucks.

Delivery of the raw material

The primary raw materials in the processing plant are farmed shrimp in the head-on form. The transported shrimp are received providing the supplier’s guarantee because only fresh head-on shrimp are selected to process head-on shell-on products.

Washing and grading

At this stage, the received shrimps are washed with running <5 ppm chlorinated chilled water and then enter the processing hall and are graded by the sorter machine. Defective shrimps (crushed, headless, broken, etc.) are removed from the processing cycle before entering the sorting machine. After grading and checking are completed, shrimp are washed again with pressured <5 ppm chlorinated chilled water.

Weighing and freezing process

before the freezing process, the HOSO shrimp are weighted as per the buyer’s requirement, then placed on the plate freezer or in the freezing tunnel to quickly freeze the products. The Head-on shell-on shrimp are frozen at -40 °C until the core temperature of the frozen HOSO products achieves -18 °C.

Packing, and labeling

The final products are packed into a printed poly bag, and finally labeling and marking are done carefully. Then the primary poly bags are put into a master carton as per the buyer’s requirement.

What is the main form of Iranian export shrimp?

In Iran, shrimp farming operations are carried out in 5 different provinces, which, based on the annual production volume, include the following:

  • Bushehr
  • Hormozgan
  • Sistan and Baluchestan
  • Khuzestan
  • Golestan

According to data provided by the Fisheries Organization of Iran, more than 90% of farm-raised shrimp are exported to different international markets. in the same vein, high-quality raw shrimp from Bushehr province is exported to European countries, Russia, China, Vietnam, Turkey and the Persian Gulf countries. According to the Iranian Customs Organization, most of Iran’s shrimp exports are raw shrimp (HOSO Vannamei).
