Preparation steps of dried shrimp

1- Fishing and transportation: First, the shrimp caught from the sea or the farm are transported to the factory. Post-catch care, fast and timely transportation have a great impact on the freshness and final quality of the product.

2- Sorting: After landing, shrimp will be sorted. First, the extra items such as small fish or oysters are removed. Then they are sorted by different sizes. In the latest technologies, smart sorter devices are used, which sizes the shrimp based on their body mass by taking pictures of the shrimp body.

3- Washing: In the next step, the shrimps are washed with fresh water to remove dirt, mud and excess material.

4- Cooking: Now it’s time to cook the shrimp. After landing, the fast cooking preserves its flavour and color. Cooking shrimp destroy bacteria and reduce the volume of water in their body. For this, shrimp are put in boiling water. Depending on the type of product, sometimes salt is also added to the water. When the shrimp turn pink and curl up, it means they are cooked. This step only takes a few minutes.

5- Draining: After cooking, shrimp are removed and drained. To speed up draining, a centrifuge is used.

6- Drying: In this step, shrimp are put in drying machines to be dehydrated. It continues until the moisture content is 20-30%. In the past, sunlight was used to dry shrimp. Nowadays, it is done within a few hours by drying machines.

7- Peeling: After drying, shrimp are put in a special device that removes the shrimp head and shell.

8- Weighing: After peeling, shrimp are weighed on a scale and ready to be packed.

9- Packaging and labeling: Well, our product is ready and now it needs to be packed and labeled. To pack shrimp, plastic bags, Ziploc, plastic containers, etc. are used. The packaging method and the applying materials should be in a way that preserves the quality of the product and causes the least damage to the environment.

When the packaging is done, product specifications such as its type, weight, producer’s name and address, country of origin, production date, etc. are included on the packaging. If the factory is equipped with traceability technology, a QR code will be registered on the package and the consumer can get all the information about the product within a few seconds by scanning this code.
